Preparation steps

1.

Rinse potatoes and cook for about 25 minutes in salt water. Rinse potatoes, peel and let cool. Coarsely grate potatoes using grater. Peel and finely chop garlic cloves, mix with potatoes and season with salt and pepper.

2.

Heat 1 tablespoon butter in greased pan about 18 cm (approximately 7 inches) in diameter. Pour in 1/4 potato dough and press with spoon. Fry over medium heat until bottom of potato fritter is golden brown.

3.

Slide potato fritter onto plate. Add 1 teaspoon butter to pan and overturn potato fritter so unbaked side is face down in pan. Press down slightly and bake potato fritter until bottom is golden brown. Remove finished fritters from pan and keep warm. Repeat process to make three potato fritters.

4.

Rinse and slice tomatoes and cut Camembert into pieces. Distribute Camembert and tomato slices on top of potato fritters and serve garnished with basil.
