- 18 ozs potatoes
- ¼ cup butter
- ¼ cup cream (48% fat)

Preparation steps
1.
Peel the potatoes and cut in half.
2.
Place the potatoes in a large pan of water over a high heat. Add a pinch of salt and bring to a boil.
3.
Cover and cook the potatoesuntil tender.
4.
Drain in a colander and leave in the colander for 3-4 minutes, until the steam has evaporated.
5.
Place the potatoes in a large bowl and mash with a potato masher until smooth.
6.
Add the butter and cream and mash until incorporated. Season to taste with salt and pepper.
