For the pancakes
1 kilogram predominantly waxy potatoes
1 egg
100 grams Pastry flour
salt
freshly ground peppers
vegetable oil (for frying)
1 onion
To serve
1 jar apple sauce (large)

Preparation steps

1.

For the pancakes, peel and finely chop the onion. Peel, rinse and grate the potatoes. Drain the liquid from the potatoes and mix them with the egg and flour. Season well with salt and pepper.

Heat some oil in a pan and spoon on a ladle of batter. Press flat and fry until golden brown on both sides. Repeat for the rest of the batter. Keep warm in the oven at 80°C (approximately 175ºF).

3.

To serve, arrange the pancakes on a platter.

Serve garnished with chives and accompanied by a rich applesauce.
