3 tart Apple
1 Tbsp lemon juice
2 Tbsps sugar
¼ tsp cinnamon

500 grams starchy potatoes (cooked)
75 grams Semolina flour
1 pinch salt
100 grams Quark
1 egg
3 Tbsps clarified butter

Preparation steps

Peel, quarter, and core apples, then roughly chop. In a saucepan, combine apples, lemon juice, sugar and cinnamon. Bring to a boil, cover and cook over low heat, about 20 minutes. Mash apples, season to taste, and let cool.

Peel, rinse and finely grate potatoes. In a bowl, mix potatoes with flour, salt, quark and egg. Let stand about 15 minutes.

Heat clarified butter in a frying pan. Pour potato mixture into the pan and cook over medium heat until the underside is browned, about 10 minutes. Place a plate on top of the pan and flip pancake. Cook another 5 minutes.

4.

With two forks, tear pancake into pieces and continue cooking, stirring, until crispy. If necessary, add additional butter. Serve pancake pieces with applesauce.
