Potato Pizza with Feta Cheese, Arugula and Ham

- 350 grams starchy potatoes
- salt
- 450 grams Pastry flour
- 1 cube Yeast (42 grams)
- 150 milliliters milk
- 2 pinches sugar
- 2 small onions
- 2 garlic cloves
- 3 thyme
- 3 Tbsps olive oil
- 750 grams crushed Tomatoes (Finished product)
- freshly ground peppers
- 300 grams Feta
- 3 bunches Arugula
- 300 grams air-dried ham (sliced)
Preparation steps
Cook the potatoes in salted water for about 25 minutes. Peel while hot and press through a ricer. Let steam evaporate.
Make a well in the flour. Dissolve yeast with 1 pinch sugar in 4 tablespoons of warm milk. Pour into the well and sprinkle with some of the flour. Let rest for 30 minutes. Then add about 1/2 teaspoon salt, remaining milk and potatoes and knead everything to a smooth dough. Cover and refrigerate overnight.
Peel the onions and garlic and chop finely. Rinse thyme, strip leaves from the stems and chop coarsely.
Sauté onions and garlic in oil, then add the tomatoes and thyme. Season with salt, pepper and sugar. Simmer over low heat until thick. Crumble the feta cheese.
Oil 2 baking sheets and sprinkle with flour. Roll out dough, lay on the baking sheets, and top with sauce. Sprinkle with cheese.
Bake pizzas on the lowest rack in a preheated oven at 200°C (approximately 400°F) for about 40 minutes. Rinse arugula and pat dry. Top pizza with arugula and ham while still hot, cut into pieces and serve immediately.
