Ingredients

For the stewed plums
500 grams Plum
2 Tbsps butter
2 Tbsps red Port wine
1 Tbsp Maple syrup
For the rösti
800 grams potatoes (predominantly waxy)
1 egg (size M)
2 Tbsps Pastry flour
salt
freshly ground pepper
clarified butter (for frying)

Preparation steps

For the stewed plums, rinse the plums, cut in half, remove pits and cut the pulp into wedges. Het the butter in a pan and cook the for 1-2 minutes. Pour in the port wine and maple syrup. Simmer for few minutes and transfer to a bowl.

For the rösti, peel, rinse and coarsely grate the potatoes. Mix the grated potatoes with egg and flour, and season with salt and pepper.

Heat clarified butter in a pan and fry small rösti in portions from the potato mixture.

3.

Serve the rösti with the stewed plums.
