4 Tbsps olive oil

2 Tbsps grated Cheese (such as Manchego)
2 Tbsps breadcrumbs

Preparation steps

Preheat the convection oven to 180°C (approximately 350°F).

Peel the potatoes and cut into slices. Peel the onion and chop finely. Rinse the peppers, cut in half, remove the seeds and ribs and cut into pieces. Crumble the feta cheese. Fry the potatoes in the covered pan for about 10 minutes in hot oil, stirring occasionally. Add the onions and peppers and fry for another 3-4 minutes. Beat the eggs with salt, pepper, and rosemary, mix in the feta cheese and pour over the vegetables. Bake in the oven for about 10 minutes. Mix the grated cheese with the breadcrumbs and sprinkle on the tortilla. Bake for about 10 minutes more until golden brown.
