600 grams waxy potatoes
2 onions
3 Tbsps olive oil
2 garlic cloves
8 eggs
salt
freshly ground peppers
½ bunch Basil

Preparation steps

1.

Peel the potatoes and cut into slices.

Peel the onions and dice.

3.

Fry the potatoes and onions in hot oil in a large skillet for about 8 minutes while stirring. Press the garlic into the pan, remove from the heat and let cool slightly.

Rinse the basil, shake dry, pluck off the leaves and cut into strips.

5.

Beat the eggs with some salt and pepper in a large bowl, then pour in the fried potatoes. Stir in the basil.

6.

Pour the potato mixture into a greased baking dish and bake on the center rack of a preheated oven at 220°C (approximately 425°F) for about 20 minutes, until golden brown.

7.

Serve warm or cold.
