18 ozs Linguine
3 Tbsps olive oil
1 shallot (finely chopped)
1 clove garlic cloves (finely chopped)
2 cups King prawn (ready to cook)
cayenne pepper
grated lemon zest
¼ cup dry white wine
¼ cup vegetable stock
cup cream (at least 30% fat)
½ bunch parsley (finely chopped)

Preparation steps

1.
Cook the pasta in boiling salted water for 8-10 min until al dente.
2.
Heat the oil in a pan and fry the shallot and garlic. Add the prawns and fry for a few minutes. Season with salt, cayenne pepper and a pinch of lemon zest and deglaze with the wine.
3.
As soon as the wine has almost fully evaporated, add the stock and the cream and season to taste.
4.
Drain the pasta, stir into the sauce, sprinkle with parsley and serve. Goes well with a fresh salad.
