- 14 ozs Spaghetti
- 1 Leek
- 12 shrimp (deveined and peeled apart from the tail segment)
- 1 tsp freshly grated ginger
- 2 cloves garlic cloves (finely chopped)
- 4 Tbsps Oil
- 1 pinch Curry powder
- 1 cup finely chopped Pineapple
- ⅜ cup Vegetable broth
- ⅜ cup Coconut milk
- lemon juice
- Sea salt
- Basil (to garnish, shredded)

1 Cutting board, 1 Paper towel, 1 Large knife, 1 Tablespoon, 1 große Skillet, 1 Slotted spatula, 1 flache Casserole dish, 1 Mini food processor, 1 Bowl, 1 Wooden spoon, 1 Citrus juicer, 1 Teaspoon, 1 großer Pot mit Deckel, 1 Sieve
Preparation steps
1.
Cook the spaghetti in boiling, salted water until al dente.

Wash and trim the leek and cut into thin strips.
3.
Wash and dry the shrimp.
4.
Heat 2 tablespoons oil and saute the leek with the garlic and ginger. Stir in the curry powder and pineapple and add the vegetable broth and coconut milk. Simmer for 1-2 minutes.
5.
Meanwhile heat the rest of the oil and fry the shrimp for 1-2 minutes.
6.
Drain the spaghetti, add to the sauce and toss to combine. Season with salt, add lemon juice to taste and serve into bowls. Add a few shrimp to each and serve sprinkled with basil.
