2 Tbsps olive oil
9 ozs Paella rice
7 ozs Peas (frozen)
5 ozs dry white wine
14 ozs Chicken broth
salt
freshly ground peppers
1 pinch Saffron
1 tsp dried thyme
1 handful Coriander (for garnish)
Lemon wedge (for garnish)

Rinse bell peppers, trim and cut into cubes. Slice sausage into pieces. Peel onion and garlic and finely dice. Cut chicken fillet into 2 cm (approximately 1 inch) pieces.

Heat oil in a pressure cooker and fry chicken and sausage until brown on all sides. Remove from the pressure cooker and then sauté onion with garlic in the pressure cooker until soft. Add rice, mix, sauté briefly, add bell peppers and peas, add chicken and sausage and deglaze with wine and broth and season with salt, pepper, saffron and thyme. Close the pressure cooker and cook for about 6 minutes over low cooking pressure (stage 1). During the entire cooking time only the first ring is to be visible. Let cool and then open the pressure cooker. Arrange the paella on a plate and serve garnished with cilantro and lemon wedges.
