300 grams Puff pastry dough (frozen)
dried Peas (for blind baking)
For the topping
100 grams Smoked salmon
2 shallots
30 grams butter
2 Tbsps parsley
2 Tbsps Dill
250 milliliters Whipped cream
3 eggs
salt
freshly ground peppers
cayenne pepper

Preparation steps

Thaw puff pastry. Roll out in a 30 cm (approximately 12 inch) circle. Line tart pan with it, making an edge all around. Cover with parchement paper and weigh down with dried peas. Bake in preheated oven at 200°C (approximately 400°F) for about 15 minutes. Take out of the oven and remove peas and paper, let cool.

Cut salmon into strips. Peel shallots and cut into cubes. Heat butter in a pan and saute shallots until soft. Spread shallots, salmon and herbs on pastry.

Whisk cream with eggs. Season with salt, pepper and cayenne pepper. Pour over salmon and bake for another 20-30 minutes. Remove from the oven and serve.
