16 ozs Spelt flour (Type 630 + 2 tablespoons for processing)
¾ oz fresh Yeast
6 Tbsps olive oil
½ tsp Raw cane sugar
1 tsp salt
3 ½ ozs Mountain cheese (i.e. Gruyere)
3 ½ ozs Herb butter
1 organic lemon (shell)
2 Tbsps -3 Tablespoons chopped mixed Fresh herbs

1 Loaf pan (approx. 25 cm length)

Preparation steps

Sift flour into a bowl. Dissolve yeast in 3 tbsp. lukewarm water and add. Knead with 2 tbsp. oil, approx. 6.75 ounces lukewarm water, sugar, and salt until a smooth dough comes away from the edge of the bowl. Cover and let rest for about 1 hour. Meanwhile, grate cheese.

For the filling, stir herb butter until soft and stir in 3 tablespoons oil and lemon zest. Brush a loaf pan with remaining oil. Roll out dough on a floured work surface to 1/4 inch thickness and cut into rectangles (about 3" x 6"). Spread thinly with herb butter and sprinkle with herbs, fold in the middle, and also spread and sprinkle on top.

Layer the dough in the loaf pan, sprinkle with cheese and then cover the loaf with herb butter and let it rise for about 20 minutes.

Bake the bread with herb butter in a preheated oven at 180 °C / 350 °F for approx. 40 minutes until golden brown. Remove from oven and let cool for about 10 minutes. Then remove the bread from the pan and serve lukewarm.
