500 grams Crookneck pumpkin
1 Tbsp brown sugar
5 Tbsps Orange juice
2 Tbsps apple cider vinegar
50 milliliters Vegetable broth
2 Tbsps raisins
1 tsp green peppercorns
½ Sorrel leaf
coarse Sea salt
1 Tbsp olive oil

Preparation steps

Peel pumpkin and cut pulp into slices. Caramelize sugar in a pan, add pumpkin slices and deglaze pan with orange juice, vinegar and broth.

Add raisins and peppercorns, simmer for about 10 minutes. Rinse lettuce leaves, set some aside for garnishing and cut the rest into strips.

3.

Add lettuce strips to pumpkin and season with salt. Arrange lettuce leaves on plates, top with pumpkin slices and drizzle with good olive oil. Serve with fresh baguette.
