4 sprigs Woodruff (harvested before flowering)
1 bottle white wine (such as dry Riesling)
1 organic lemon
250 milliliters Sparkling wine (or more, to taste)
fresh Woodruff (for garnish)

Preparation steps

1.

Rinse the woodruff and shake dry well. Tie the stalks in a bunch and leave hanging upside down to dry about 1 - 2 hours.

Hang the woodruff in a carafe and fasten using the cord. Pour the wine over the woodruff (It is best if the bitter stem ends project out of the wine.). Rinse the lemon in hot water, cut into slices and add to the wine. Infuse about 20 minutes.

Then remove the woodruff and chill the carafe at least 30 minutes until cold.

Before serving, fill the carafe with cold champagne and garnish with fresh woodruff leaves.

5.

Sweeten the punch to taste with a little vanilla sugar or elderflower syrup.
