- 8 Sole fillet (about 100 grams)
- 2 Tbsps lemon juice
- salt
- freshly ground peppers
- 30 grams Crab butter
- 30 grams Pastry flour
- 50 milliliters white wine
- 250 milliliters water
- 50 milliliters Whipped cream
- 100 grams shrimp
- 1 scallion
- 2 Tomatoes
Preparation steps

Blanch tomatoes in boiling water for a few seconds, then peel, quarter, core and cut into small cubes. Rinse, trim and cut scallions crosswise or finely chop.

Sprinkle sole fillets with lemon juice and season with salt and pepper. Roll fillets up and place in a bowl. Mix crayfish butter with flour and add to the bowl in large flakes. Mix in wine, water, cream, shrimp, scallions and tomatoes. Mix well. Cover and cook in the microwave (at 850 watts), about 8 minutes.

Remove fish fillets, stir sauce until smooth and season with salt and pepper. Serve fillets topped with sauce.
