Preparation steps

Rinse the quince then wipe drywith a clean kitchen towel. Cut into quarters, remove the stones, then cut into pieces. Rinse the lemon in hot water, pat dry, and remove the zest (ensuring you don't remove any of the bitter white pith). Peel and slice the ginger. Place the ginger, lemon zest, quince, cloves, and sugar into a wide-necked carafe. Pour the grain alcohol over the prepared ingredients, seal tightly, and let infuse in a cool, dark place for 3 weeks.

Once the aging period has ended, pass the liquid in the carafe through a fine strainer into another clean carafe or bottles. Seal tightly and let age another 1 week before serving.
