1 organic lemon
1 l Vodka
400 grams sugar

Preparation steps

1.

Rinse the quince, pat dry, and cut into pieces. Rinse the lemon in hot water, pat dry, and remove the zest in strips (making sure you don't remove any of the bitter white pith). 

2.

Place the sugar, quince, and lemon zest in a jar. Fill with the vodka and seal well. Place in a dark, cool place for 2 weeks. Shake occasionally during the 2 week aging period, to ensure that the sugar is always dissolved. 

3.

Pass through a piece of cheesecloth (several times, if needed) into clean bottles and seal tightly.
