- 1 stalk Leeks
- 2 Tbsps Vegetable broth
- 500 grams black Daikon radish
- 2 small Pear
- 2 Tbsps lemon juice
- 2 Tbsps Yogurt (0.1% fat)
- 2 Tbsps Whipped cream
- 1 Tbsp Walnut oil
- 2 Tbsps Canola oil
- 1 tsp Horseradish cream
- salt
- freshly ground peppers
- 2 Smoked trout
Preparation steps

Trim and rinse the leek and cut into thin rings. Sauté in some vegetable broth for about 5 minutes with the lid closed.
Peel and finely grate the radishes. Rinse and quarter the pears, remove the seeds and cut into thin slices. Immediately drizzle with lemon juice.

Combine the leek, the radishes and pears in a bowl and gently mix together.
Combine the yogurt with the sour cream, the oils and the horseradish and season with salt and pepper. Mix into the salad and transfer to plates.
Tear the trout fillets into bite-sized pieces and serve arranged on the salad.
