300 grams Daikon radish
1 stalk Leeks
3 Tbsps White vinegar
2 Tbsps soy sauce
1 Tbsp honey
3 Tbsps Peanut oil
salt
cayenne pepper
2 Tbsps Peanuts (chopped)
2 Tbsps cilantro (chopped)
50 grams soybean sprout
1 bowl red Daikon cress
Toast (to taste)

Preparation steps

Rinse, trim, and peel the radish and leeks. Halve the leeks lengthwise, cut into 8 cm (approximately 3 inch) long pieces, and julienne. Using a peeler, thinly cut the radish into 8 cm (approximately 3 inch) long pieces, and julienne also. Soak both for 30 minutes in cold water.

Mix the vinegar with the honey, oil, peanuts, and cilantro. Season to taste with salt and cayenne pepper.

Drain the vegetables and transfer to plates. Drizzle with the sauce, and sprinkle with the bean sprouts and watercress. Serve with toasted bread, if you'd like.
