Raspberry and Kohlrabi Salad

Raspberries are rich in powerful antioxidants while kohlrabi adds vitamin C to this healthy salad!
This salad is perfect for a refreshing summertime appetizer or a delicious light dinner if you add some grilled chicken.

- 2 ½ cups Snap pea
- 1 ⅔ cups small Kohlrabi (peeled and finely sliced)
- 1.333 cups Radish (finely sliced)
- 2 Lettuce (e. g. Romaine, torn into smaller pieces if desired)
- 4 Plum tomato (sliced)
- 1 handful Radish sprout
- 1 cup Raspberries
- 2 Tbsps Cider vinegar
- 1 tsp honey
- 2 Tbsps Orange juice
- 2 Tbsps sunflower oil
- 1 oz Pomegranate seed
- 2 Tbsps sliced Chives
Preparation steps
Blanch the snap peas in salted water for 1-2 minutes. Rinse in cold water to stop the cooking, drain well and cut in half lengthwise.
Put the snap peas, kohlrabi, radishes, lettuce, tomatoes, and radish shoots in a bowl.
In a bowl, crush around 2 ounces of the raspberries with a fork. Add the vinegar, honey, orange juice, and oil. Whisk together and season to taste with salt and ground black pepper.
Add the dressing to the salad and mix well. Arrange on plates. Scatter with the pomegranate seeds, place the remaining raspberries on top and serve sprinkled with chives.
