1 centiliter Orange liqueur

150 grams Quark
50 grams sugar
1 Tbsp Vanilla sugar
250 milliliters Whipped cream
1 tsp cocoa powder
4 tsps Sesame seeds

Preparation steps

1.

Rinse an orange in hot water, wipe dry and finely grate about half of the peel into a bowl. Cut the orange in half and squeeze out the juice. Peel the remaining two oranges with a sharp knife, remove the pith and cut into segments.

Rinse and trim the blueberries and pat dry. Place in a bowl with the liqueur and 3-4 tablespoons of orange juice.

Rinse the raspberries, pat dry and set about 12 aside. Purée the remaining raspberries and press through a sieve.

Combine the quark in a bowl with the sugar, vanilla sugar, orange zest and remaining orange juice and mix until smooth. Whip the cream until stiff and fold into the quark mixture.

Take about 4 tablespoons of quark mixture and mix in a bowl with the cocoa. Add the remaining quark mixture to the puréed raspberries and mix well.

Spoon about half of the cream filling into four dessert glasses. Add a layer of blueberries and top with 1-2 segments of orange. Spread the rest of the raspberry cream on top. Scatter the remaining berries and decorate with slices of orange.

Chill for at least 1 hour.

To serve, shower with 1 teaspoon of sesame seeds and a dollop of chocolate quark on top.

Serve garnished with raspberries and mint.
