- 500 grams Raspberries
- 80 grams sugar
- 3 Tbsps lemon juice
- 3 sheets white gelatin
- 3 sheets red gelatin
- 200 milliliters clear Apple juice
- 20 Raspberries (to garnish)
- mint (to garnish)
Preparation steps
Rinse the raspberries and mix with sugar, lemon juice and apple juice. Bring to a boil and simmer until the berries dissolve. Pour the raspberry puree in a lined cloth strainer and drain off the juice. Soak both types of gelatin in cold water. Fill the drained raspberry juice with water if necessary to 1/2 liter (approximately 2 cups). Add the gelatin while dripping wet in a saucepan and dissolve while stirring - do not boil.
Stir the dissolved gelatin with the raspberry juice, pour the liquid into 4 rinsed, small pudding molds (or dessert bowls) and place them for at least 4 hours in the refrigerator until the puddings have solidified. To serve, run the molds briefly in hot water, use a knife and place jello on a dessert plate. Garnish with raspberries and mint leaves.
