3 large egg whites (100 grams)
1 tsp lemon juice
200 grams sugar

200 grams blanched almonds (ground)
50 grams breadcrumbs

Preparation steps

1.

Thaw the raspberries.

2.

Preheat oven to 140°C (approximately 285°F). Line a baking sheet with parchment paper and line it with baking wafers.

3.

Puree raspberries with an immersion bender and strain through a sieve.

4.

Beat egg whites with lemon juice and sugar until shiny and cut-resistant. Fold in almonds, breadcrumbs and raspberry puree.

5.

Place mixture in a piping bag without a spout and pipe onto baking wafers. Bake carefully until light yellow in color for about 25-30 minutes.
