1 Tbsp lemon juice

Preparation steps

1.

Bring sugar to a boil with 120 ml (approximately .5 cup) of water in a pot. Boil until sugar has dissolved. Remove from heat and cool.

Rinse raspberries, reserve 4 and puree the remaining with lemon juice using an immersion blender. Strain through a sieve and mix with the sugar water. Pour into a shallow dish and place in freezer for about 5 hours, stirring every 30 minutes in the first 2 hours to prevent the formation of ice crystals.

3.

Remove from freezer, thaw slightly and use an ice cream scoop to remove. Place in glasses and serve garnished with a reserved raspberry and mint leaves.
