Preparation steps

For the parfait, line a loaf pan with plastic wrap and place in the freezer. Halve the vanilla pod lengthwise and scrape out the seeds. Bring the milk to a boil with the vanilla pod. Whip the egg yolks with 100 grams (approximately 1/3 cup) sugar until foamy over a hot water bath.

Gradually pour vanilla milk into the egg mixture while whisking and continue to beat over an ice water bath until cool (remove vanilla pod). Beat cream until stiff and fold into the egg-milk mixture. Pour into the cooled loaf pan. Puree raspberries with the remaining sugar in a blender, press through a sieve and spread on the cream layer.

Use a fork to swirl the raspberry mixture into the cream layer. Wrap well and freeze at least 4 hours. Remove the plastic wrap, cut the parfait into slices and serve garnished with fresh raspberries.
