- 250 grams Long grain rice
- salt
- 200 grams Snow peas
- 2 scallions
- 600 grams King prawn (peeled, deveined)
- 1 tsp sunflower oil
- 1 garlic clove
- 1 pc ginger
- 300 milliliters Coconut milk
- 1 tsp Curry powder
- 1 generous pinch Chili powder
- peppers
- 1 Tbsp Lime juice
- ½ bunch cilantro
Preparation steps
Cook rice in a pot of salted boiling water according to package instructions.
Meanwhile, rinse snow peas, trim and blanch for 2 minutes in boiling salted water. Remove from heat, drain, rinse with cold water and drain well.
Rinse scallions, trim and cut into rings. Rinse shrimp under cold water and pat dry.
Heat oil in a pan and fry shrimp over medium heat for 3-4 minutes.
Peel garlic and ginger, finely chop and add to shrimp. Add snow peas and scallions. Mix in coconut milk. Add curry powder, chili powder, salt and pepper and let simmer for about 5 minutes over medium heat. Season with lime juice.
Rinse cilantro, shake dry and pluck leaves. To serve, distribute rice between 6 preheated bowls, arrange shrimp curry on rice and garnish with cilantro.
