3 Tbsps honey
3 ozs Whole Grain Spelt Flour
2 ¾ ozs ground almonds
1 pinch salt
4 Tbsps cocoa powder (heavily deoiled)
3 ½ ozs white chocolate
2 ¾ ozs blanched almonds
1 ¾ ozs Dark chocolate (min. 70% cocoa content)
8 red Non-pareils

1 small Springform pan (18 cm Ø)

Preparation steps

Peel sweet potato and cut into small pieces. Cook them in a pot with a little water until soft, about 15 minutes. Put sweet potatoes together with dates in a food processor and puree to a paste.

Line the bottom of the small springform pan with baking paper. Mix coconut oil, honey, wholemeal spelt flour, ground almonds, 1 pinch of salt and cocoa powder in a large bowl and stir thoroughly with the sweet potato-date mix. Chop 3 Tablespoons white chocolate and almond kernels and stir both into the batter.

Pour batter into baking pan and smooth out. Bake brownies in preheated oven at 200 °C / 350 °F on middle rack for 30-35 minutes. Remove from oven and let cool for 20 minutes. Then cut the brownies into 8 equal pieces.

For garnish, chop remaining white chocolate, melt, and place 16 drops of approx. 1-inch Ø on a piece of baking paper. Melt dark chocolate and pipe as pupils on the white chocolate eyes. Stick the eyes onto the cake pieces with the remaining liquid chocolate, fix sugar balls as noses, and press the salted pretzels into the edge of the cake as ears. Place reindeer brownies on a platter and serve.
