- 300 grams Rhubarb
- 1 Vanilla bean
- 100 grams Mascarpone
- 50 grams Raw cane sugar
- 350 grams Quark
- 1 Tbsp brown sugar
- 4 Tbsps Orange juice
- 100 grams Strawberries
- 12 Strawberry flowers (as desired)
Preparation steps
Rinse, trim and peel the rhubarb and cut into very small cubes. Split the vanilla bean lengthwise and scrape the seeds into a bowl.
Stir the mascarpone and sugar into the bowl with the vanilla seeds. Beat the quark until creamy. Stir the quark and half of the rhubarb into the mascarpone.
In a small saucepan, combine the brown sugar and remaining rhubarb. Add the orange juice and simmer 2-4 minutes. Transfer to a bowl and let cool briefly.
Meanwhile, rinse, hull and halve the strawberries. Divide the rhubarb compote into 4 glasses, top with the mascarpone cream and garnish with strawberry pieces. Decorate as desired with 3 strawberry flowers.
