The rice salad with apricots contains many immune-strengthening substances, such as apiin from celery. Of course you can also prepare the rice salad with dried apricots exclusively with Basmati rice. Alternatively, cooked natural rice is also suitable. This adds ballast and minerals to the salad. Goes well with a stuffed chicken breast.

Preparation steps

1.

Rinse the rice and cook until tender with two parts lightly salted water about 25 minutes. Then place on a plate and let cool.

Rinse the apple, bell pepper and celery, wipe dry and cut into small cubes. Also chop the dried apricots and mix all together in a bowl.

Stir together sugar, oil, vinegar and soy sauce and pour over the salad. Mix in the rice and season with soy sauce. Stir in the peanuts and serve garnished with mint.
