The rice salad with apricots contains many immune-strengthening substances, such as apiin from celery. This plant substance is able to slow down bacteria, viruses and fungi and thus supports our defences. Through the paprika, vitamin C comes into play, which is also good for our immune system. Of course you can also prepare the rice salad with dried apricots exclusively with Basmati rice. Alternatively, cooked natural rice is also suitable. This adds ballast and minerals to the salad. Goes well with a stuffed chicken breast.

- 200 grams Wild rice
- salt
- 1 Apple
- 1 green Bell pepper
- 1 Celery
- 50 grams dried Apricot
- 1 pinch sugar
- 2 Tbsps sesame oil
- 2 Tbsps White vinegar
- soy sauce
- 40 grams unsalted Peanuts (toasted)
- mint (for garnish)
Preparation steps
Rinse the rice and cook until tender with two parts lightly salted water about 25 minutes. Then place on a plate and let cool.
Rinse the apple, bell pepper and celery, wipe dry and cut into small cubes. Also chop the dried apricots and mix all together in a bowl.
Stir together sugar, oil, vinegar and soy sauce and pour over the salad. Mix in the rice and season with soy sauce. Stir in the peanuts and serve garnished with mint.
