Apple Cookies with Dried Apricots

Nutritional values
The many complex carbohydrates from Oatmeal guarantee a lasting supply of energy and a stable blood sugar level - so cravings don't stand a chance! The dried fruits not only provide a lot of fiber, but also make added sugar superfluous thanks to the fruity sweetness.
It is best to use unsulfured dried fruit, as the sulfur can cause headaches in some people. Instead of oatmeal you can use another type of flake, the ground almonds can be well replaced by ground hazelnuts or walnuts. Store the cookies in an airtight container that can be sealed.

Finely dice apricots and apple rings. Mix flaxseed with oat drink and dried fruit. Melt coconut oil over low heat and pour in, add applesauce and let swell for about 10 minutes.

Remove approx. 1 tablespoon of the mixture at a time (e.g. with an ice cream scoop), form into 20 balls, place on a baking tray lined with baking paper, and press down lightly. Bake in a preheated oven at 180 °C / 350 ˚F for about 15 minutes until golden brown.
