- 300 grams Long grain rice
- salt
- 250 grams Boiled ham (in slices)
- 3 scallions
- 3 Limes
- 3 Tbsps White vinegar
- 8 Tbsps Canola oil
- 1 Tbsp honey
- 1 pc ginger
- 300 grams Pineapple (fresh or canned)
- cayenne pepper
- 2 stalks cilantro
- 100 grams Cashews
Preparation steps

In a colander, rinse the rice in cold water. Boil salt water that is double the amount of the rice. Cover and let soak for about 20 minutes over low heat. Then rinse thoroughly in a colander with cold water and drain.

While the rice swells, cut the slices of ham into strips. Rinse the scallions, trim, cut in half lengthwise and cut into thin rings.

Squeeze 2 limes. Mix the lime juice with vinegar, oil and honey. Peel the ginger, finely grate and add to the mixture. Mix the rice with marinade, pineapple, ham and onion. Season with salt and pepper. Let stand for 30 minutes.

Rinse the cilantro, shake dry and finely chop the leaves. Add to the salad with the cashews. Garnish with lime wedges. Bon appetit!
