1 carrot
1 Tbsp ginger (grated)
80 milliliters milk
1 Tbsp butter
80 grams Pastry flour
2 eggs
200 grams Ricotta cheese
salt
freshly ground peppers

Preparation steps

1.

Peel carrot and grate very finely. Blanch in boiling salted water for a few seconds and rinse in cold water, drain well.

Combine milk with butter and bring to a boil. Add flour, stirring, and simmer until mixture thickens. Pour into a bowl and add eggs, ricotta, ginger and carrot and whisk well. Season with salt and pepper and let cool.

3.

With 2 tablespoons, separate dumplings from the mixture and cook in boiling salted water for about 6 minutes. Remove with a slotted spoons and arrange on plates. Serve immediately.
