75 grams Pastry flour
75 grams almonds

Preparation steps

1.

Rinse the spinach, trim and blanch in plenty of boiling salted water. Rinse in cold water and drain, then squeeze out the excess water and chop finely.

Mix together the ricotta, spinach, eggs and 2/3 of the cheese, stir in the flour and ground almonds and season with salt, pepper and nutmeg. Using 2 teaspoons form small oblong shaped dumplings and place on a floured work surface. Bring abundant salted water to a boil in a pot, add the dumplings, lower the heat and simmer for 5 minutes, until they float to the surface. Do not allow to boil.

Remove the dumplings with a slotted spoon, drain and set side by side in a greased baking dish. Sprinkle with almond slivers, distribute small pieces of the butter over the top and broil for about 4 minutes. Sprinkle with Parmesan and serve immediately.
