Preparation steps

Rinse roast beef, pat dry, trim fat and season with salt and pepper. Place roast beef on a baking sheet and cook to the oven preheated to 200°C (approximately 400°F) for 30 minutes. Finely chop sliced bread, mix with soft butter, salt, pepper, lemon juice and 1 1/2 tablespoons horseradish, chopped chives and stir well.

Let mixture rest in a refrigerator for 5 minutes, then roll out between 2 pieces of parchment paper to the size of the roast and refrigerate again. Remove beef from the oven and increase oven temperature 220°C (approximately 450°F). Place herb crust around roast as a jacket, press gently, put on a baking sheet and cook again for 20 minutes.

Rinse apples, peel, remove core and cut into pieces. Caramelize sugar in a pot, add 150 ml (approximately 5 ounces) water, add apple, simmer for 10 minutes and season with remaining horseradish. Remove beef from the oven, let it rest for 5 minutes and then slice the meat. Serve with apple compote.
