2 Tbsps clarified butter
2 Tbsps sharp Mustard
2 Papaya
1 red onion
2 Tbsps Red wine vinegar
salt

3 Tbsps olive oil

Preparation steps

Sauté the beef in hot clarified butter on all sides briefly. Season with salt and pepper and coat with mustard. Place on a baking sheet and bake in a preheated oven at 120°C (approximately 250°F) for about 50 minutes. Cook until pink or core temperature at 60°C (approximately 140°F). Remove and let cool completely.

Peel the papayas, remove the core, halve and cut into wedges. Peel the onion and finely chop. Mix the vinegar with salt, pepper and oil. Stir in the onions and season.

Serve the papaya with thin slices of roast beef on a plate and sprinkle with salad dressing. Serve with whole-grain bread.
