Preparation steps

Peel, halve, remove the seeds and cut the papaya into cubes. Peel and finely chop the onion. Rinse the pepper, remove the seeds and white ribs and cut into small cubes.

In a bowl, whisk together the vinegar and oil, season with salt and pepper and stir in the papaya, onion, pepper and parsley.

Serve the roast beef with the papaya salsa.
