- For the salsa
- 2 Papaya
- 1 chili pepper
- 1 tsp freshly grated ginger
- 1 Tbsp vegetable oil
- 100 milliliters (approximately 3 1/2 ounces) Orange juice
- 1 tsp brown sugar
- Lime juice
- For the fish
- 4 ready to cook à 250 grams (approximately 9 ounces) Barramundis
- salt
- coarsely ground Bush pepper (coarsely ground)
- 2 Tbsps Cornmeal
- 4 Tbsps vegetable oil
- cilantro (for garnish)
- Chives
Preparation steps

Peel the papaya, cut in half, remove seeds and dice. Rinse, the chiles and cut into rings. Heat the oil in a skillet and saute the chiles and ginger for a minute. Add the orange juice, sugar and papaya cubes and season with lime juice. Remove from the heat and let cool to room temperature.

Rinse the fish, pat dry and break the back in the middle. Season all over with salt and pepper. and dredge in flour. Heat the oil in a skillet and saute the fish until golden brown and cooked through, 3-4 minutes per side. To serve, spoon the salsa onto a serving platter and arrange the fish on it. Sprinkle with cilantro and serve garnished as desired with chives.
