2 Tbsps Dijon mustard
1 red chili pepper
4 ½ ozs Cucumber (0.25 cucumber)
9 ozs Strawberries
8 ozs Avocados
1 Lime (juice)
1 scallion
½ bunch cilantro
2 Tbsps olive oil

Preparation steps

Rinse roast beef, pat dry, remove fat and tendons, season with salt and pepper. Heat oil in a frying pan. Sear roast beef on all sides for 5 minutes at a time over high heat. Remove meat, let cool for 3-4 minutes. Meanwhile, wash rosemary, shake dry and pluck off leaves. Brush the meat with mustard and cover with rosemary.

Cook the meat on the rack in a preheated oven at 140 °C / 275 °F; with a fat pan underneath) for about 50 minutes, depending on the thickness of the meat and the desired degree of cooking (core temperature pink)

Meanwhile, for the salsa, halve chili pepper lengthwise, remove seeds, wash and chop. Cucumber clean, wash and cut into small cubes. Strawberries clean, wash, partly in slices, partly in small pieces cut. Halve the avocado, remove the pit, lift the flesh out of the skin, dice finely and mix immediately with lime juice. Wash the cilantro, shake dry and pluck the leaves.

Mix chili, cucumber, strawberries, avocado and cilantro in a small bowl, season with salt and pepper and mix in olive oil.

Remove roast beef from oven and let rest for 10 minutes. Then cut into thin slices. Arrange 3 slices of roast beef with 3-4 tablespoons of strawberry salsa on plates.
