- 4 Chicken legs (divided, or 1 whole chicken cut into 6 parts)
- 8 Chicken wing
- 2 lemons (juiced)
- 3 Tbsps olive oil
- 2 Tbsps liquid honey (such as acacia honey)
- 4 Tbsps water
- salt
- 1 tsp ground chili peppers
- 1 tsp dried thyme
- plentiful bay leaves
Preparation steps
For the marinade, mix the lemon juice with olive oil, water, honey, thyme and ground chile pepper, and season with salt.
Rinse the chicken pieces and pat dry. Add the chicken pieces into the marinade and mix well until all the chicken pieces are coated. Let marinate for about 2 hours in the refrigerator.
Grease a baking sheet with some olive oil and cover with bay leaves. Drain the marinated chicken pieces slightly and place over the bay leaves in the baking sheet. Roast in a preheated oven at 250°C (fan: 230°C, gas mark 5) (approximately 480°F) for about 30-35 minutes. Turn the chicken pieces once, and keep brushing the chicken pieces repeatedly with the remaining marinade in between.
Take out the chicken pieces from oven and brush immediately with some honey. Serve on a bed of fresh bay leaves.
