1 Leg of lamb (1.6 kg)
Sea salt

6 Tbsps olive oil
2 garlic cloves
1 lemon (juice)
1 Tbsp freshly chopped rosemary
1 Tbsp honey
1 tsp pink peppers

Preparation steps

1.

Preheat oven to 160°C (approximately 325°F).

Rinse the lamb, pat dry and season with salt and pepper. In a roasting pan with 2 tablespoons of hot oil, sear lamb on all side. Add garlic bulbs and deglaze with a little water. Cook in preheated oven for about 2 hours.

3.

Combine lemon juice with remaining oil, rosemary, honey and pink pepper together and baste the lamb during the last 60 minutes of cooking. Add a little water as required.

4.

Remove from oven and serve on a bed of herbs as desired.
