- For Mango Salsa
- 1 ripe Mango (peeled; seeded and chopped)
- ¼ cup red Bell pepper (finely chopped)
- 2 Tbsps fresh cilantro (finely chopped)
- 2 Tbsps fresh Lime juice
- 1 Tbsp fresh lemon juice
- For Spice Rub
- 2 Tbsps brown sugar
- 1 tsp ground cinnamon
- 1 tsp allspice
- 1 Tbsp Chili powder
- 1 tsp ground Cumin
- 1 tsp Onion powder
- ½ tsp garlic powder
- ¾ tsp crushed Red pepper flakes
- ¼ tsp salt
- For Pork Tenderloin
- 2 Tbsps good quality olive oil
- Pork tenderloin (approx. 1.125 kg | 2.5 lb total)
- salt (to taste)

Preparation steps

For Mango Salsa:

In a medium bowl, combine mango, red bell pepper, cilantro, lime juice and lemon juice. Gently toss to thoroughly mix. Cover, and allow to rest for 30 minutes before serving.

For Spice Rub:

Combine all ingredients in a small bowl. Transfer spices to a shallow dish or pie plate. Set aside.

For Pork Tenderloin:

Preheat oven to 400º F.

Heat olive oil in medium skillet, over high heat. Season pork with salt. Dredge or dry rub pork with spice rub, shake off any excess rub. Sear pork on all sides until golden brown, about 5 to 6 minutes.

Transfer pork to oven; cook about 12 to 15 minutes or until a meat thermometer inserted into center of pork registers 150° F. Transfer pork to platter and tent with foil. Let stand 5 minutes before slicing. Serve with mango salsa and garnish with fresh sliced lime and cilantro and diced red pepper.
