1 tsp peppercorns
4 Juniper berries
4 sprigs thyme

2 Tbsps gin
1 fresh lemon (Juice and zest)
5 ozs Blueberries

Preparation steps

Preheat the oven to 400 F .

Wash and pat dry 4 chicken breasts. Brush with olive oil, Season with crushed peppercorns, juniper mix, and leaves of 2 thyme sprigs. Place the chicken breasts into a roasting dish and cook in the preheated oven for about 10 minutes.

Meanwhile, mix crème fraîche with gin, lemon juice, and zest of 1 lemon. Stir well and season with salt. Wash and drain the blueberries. Remove the chicken breasts from the oven and spread the crème fraîche mix over them. Top with blueberries and continue cooking in the oven for about 10 more minutes or until ready (chicken juices should run clear when pricked with a fork). Garnish with remaining thyme sprigs and serve immediately.
