Ingredients

For the roasted meat and vegetables
600 grams Sirloin steak
salt

2 Tbsps vegetable oil
3 red and green paprika
1 Zucchini
1 large onion
2 garlic cloves
30 grams butter
50 milliliters Red wine
200 milliliters Vegetable broth
1 Tbsp sauce thickener (dark, as required)
For the bread
4 slices white bread
2 Tbsps Garlic butter

Preparation steps

For the roast meat and vegetables: Season meat with salt and pepper, sear in hot oil on both sides, wrap in aluminum foil and place in oven at 80°C (approximately 175°F) for about 20 minutes. Then allow meat to rest.

In the meantime, rinse bell peppers, cut in half, remove seeds and ribs and cut into strips. Peel onion, cut in half and also cut into fine strips. Rinse summer squash and cut into thin slices. Peel garlic and finely chop. Heat butter in a large frying pan and fry vegetables in it, season with salt and pepper, deglaze with red wine and pour in broth. Braise for 3 minutes. Add cornstarch to thick, as desired and season to taste.

Spread bread with garlic butter and quickly grill.

Remove meat from the oven, pour gravy for vegetables, cut meat into thin slices, mix with vegetables and arrange on plates. Place bread on plates and serve immediately.
