20 garlic cloves
3 shallots
4 sprigs rosemary
40 grams coarse Sea salt

Preparation steps

Preheat oven to 220°C (approximately 425°F).

Rinse and scrub potatoes thoroughly and drain. Place potatoes and garlic cloves in a large roasting pan. Peel shallots and cut in half or leave whole, depending on size. Mix shallots with potatoes and garlic. Rinse rosemary, shake dry and strip needles from stems. Season potatoes with rosemary, salt and olive oil. Mix well. Bake 40 minutes to 1 hour. To check for doneness, pierce potatoes with the tip of a sharp knife. Serve potatoes with cream cheese or as an accompaniment to grilled meat or fish.
