Rösti Appetizers with Shrimp

- 1 kilogram waxy potatoes

- 2 eggs
- 2 Tbsps Pastry flour
- 100 grams Mayonnaise
- 100 grams shrimp (cooked)
- 1 Orange
- 1 Tomato
- Safflower oil (to saute)
- parsley (for garnish)
Preparation steps
Preheat the oven to 70°C (approximately 160°F). Scrub, peel and coarsely grate potatoes and squeeze well to get rid of excess liquid. Place in a bowl and stir in the egg and flour and season with salt and pepper. In a wide pan heat oil and working in batches, drop small mounds of the potato mixture into the pan, flattening them with a spatula. Drain briefly on paper towels, season with salt and keep warm in the oven.
Working over a bowl, with a paring knife, follow the curve of the fruit and remove the peel and white pith from the orange. Cut in between the membranes to release the fruit.
Rinse tomatoes, cut into quarters, remove seeds and cut into small cubes. Drain shrimp and pat dry with kitchen towels.
To serve, spread a dollop of mayonnaise on each pancake, top with shrimp and orange segments and garnish with diced tomatoes and parsley.
