- 8 slices Sirloin steak (each about 80 grams)
- 60 grams sun-dried Tomatoes (in oil)
- 1 Tbsp Pine nuts
- 1 garlic clove
- 1 Tbsp freshly grated Parmesan
- salt

- 100 grams Feta
- 3 Tbsps Pastry flour
- 2 eggs
- 100 grams breadcrumbs
- 2 Tbsps clarified butter
Preparation steps

Rinse and pat dry meat, flatten, if necessary. Drain tomatoes, taking care to collect all oil. Puree tomatoes with pine nuts, peeled garlic and Parmesan in blender finely. Add enough tomato oil to make spreadable pesto. Season with salt and pepper.

Spread meat with pesto. Sprinkle with crumbled feta and roll up. Secure with toothpicks. Coat roulades with flour, dip into beaten eggs and finally coat with breadcrumbs.

Heat butter in a pan and brown roulades for about 5-6 minutes on all sides, basting with butter often.
4.
Drain on paper towels, remove toothpicks and arrange on plates. Serve.
5.
If desired, serve with potatoes and salad.
