- 2 slices white bread
- 7 Tbsps sunflower oil
- 4 Chicken breasts (about 120 grams)
- salt

- 1 Tbsp White vinegar
- 1 Tbsp lemon juice
- 3 Tbsps freshly grated Parmesan
- 1 pinch sugar
- 200 grams Lettuce (e.g., romaine)
- 1 Avocado
Preparation steps
Cut the crusts off the bread, cut in cubes, and sauté 2–3 minutes in a pan with 2 tablespoons hot oil until golden brown and crispy. Remove croutons to paper towel to absorb the oil.
Rinse the chicken breasts, pat dry, and cut into strips or cubes. Sauté for 2–3 minutes in 1–2 tablespoons hot oil until golden brown. Remove from the heat and leave until done. Season with salt and pepper.
Mix the remaining oil with the vinegar, the lemon juice, and 2 tablespoons Parmesan. Season dressing with sugar, salt, and pepper.
Rinse and dry the lettuce. Cut or tear into smaller pieces. Peel the avocado, cut in half, remove seed, and cut into thin slices.
Arrange the lettuce and avocado on plates. Place the chicken on top drizzle with the dressing. Serve sprinkled with the croutons and some parmesan.
