125 grams cold butter
1 pinch salt
1 egg

250 grams Smoked salmon (in slices)
150 grams Sour cream
100 grams Whipped cream

Preparation steps

Ridge the flour on the work surface, mix with salt and make a well in the center of the flour. Cut the cold butter into small pieces and distribute all around the ridge, put the egg in the center.

Mix all the ingredients by chopping with a knife, as small dough crumbs arise quickly knead into a dough with your hands, form into a ball, wrap in plastic wrap and chill 30 minutes.

In the meantime, trim the scallions, rinse and cut the green into thin rings, then sauté in hot butter about 2-3 minutes while stirring, season with salt and pepper, remove from heat and let cool.

Cut the smoked salmon into strips and mix with the scallions.

Preheat the oven to 200°C (400°F).

Mix sour cream with cream and the eggs, season with salt, pepper and cayenne pepper.

Roll out the dough on a floured surface slightly larger than the shape, line the buttered pan with dough, form an edge and distribute the salmon and spring onion mixture on top. Pour the egg-cream mixture over it and bake in preheated oven about 30 minutes. Cut into pieces to serve.
