- 2 sprigs Chervil
- 1 sprig Tarragon
- 3 Chives (plus a few for decoration)
- 2 sprigs flat leaf parsley
- 1 ½ cups fromage frais
- salt
- peppers
- ⅞ cup double cream
- 2 cups Smoked salmon
- lemon juice
Preparation steps

Wash, dry and finely chop the herbs.

Blend the fromage frais in a mixer and place it in a mixing bowl. Add the herbs. Season with salt and pepper. Mix well with a wooden spoon.

Whip the cream until light and fluffy. Gently stir in the cheese and herb mixture.
4.
Cut the smoked salmon steak into cubes and arrange them in a shallow dish. Sprinkle with lemon juice and mix.
5.
Share the cheese and herb mousse between the glasses. Add the diced lemony salmon and refrigerate until you are ready to serve. Decorate with a few chive stalks.
